[Translate to English:] Auberginen mit Feta

Eggplants with feta

INGREDIENTS:

2-3 aubergines
250 ml tomato puree
1 clove of garlic
salt
Feta cheese
Olive oil

 

PREPARATION:
Clean the aubergines and slice lengthways. Fry them in a pan and put them on kitchen paper to soak up the oil. In a saucepan, cook the tomato puree and a little water together with the garlic until it thickens. Season with salt. Cut the cheese into rectangles (about as wide as the aubergines are + about 1 cm high) and wrap the fried aubergine slices around them. Then pour the sauce over it.

Feta Saganaki

INGREDIENTS:
200 gr. feta
1 small tomato
1/2 pepper
1 slice of Gouda
some oregano




PREPARATION:
Put the feta cheese in a clay mold. Add the tomato + bell bell pepper cut into small pieces. Top with the slice of cheese and sprinkle oregano. Heat in the oven (at about 180 degrees) or in the microwave until the cheese (feta+gouda) softens and melts.

INGREDIENTS:
1 kg medium zucchin
olive oil
1 large onion
1 cup grated feta
flour
3 eggs
chopped dill or mint to taste
salt, pepper, oil for frying

PREPARATION:
Wash and coarsely grate the zucchini. Season with 1 tsp salt and place in a colander to drain. Lightly fry onion in oil. Mix zucchini with remaining ingredients in a bowl. Heat plenty of oil in a pan, form small flat balls in the flour and fry until golden brown on all sides.
